Di organised a big day to celebrate her 80th birthday with family and friends at home. As well as making a small mountain of scones, some lemon drizzle cake and an egg free chocolate cake, Di asked me to ice this lovely rich fruit cake that she had made herself. She has spent a life time involved in golf and came up with the idea of the design of her cake. Translated into sugar with a few additional embellishments, here it is.
